Vegetarian Burger Recipe

Here’s a great vegetarian burger recipe, Italian Mushroom Burger with Vegetables.

While I’m sure vegetarians had been making their own burgers for decades the first acknowledged veggie burger was created, in London, by Gregory Sams in 1982, calling it the ‘VegeBurger’.

Gregory and his brother Craig had run a famous natural food restaurant in Paddington since the 1960s[2]. A Carrefour hypermarket in Southampton sold 2000 packets in three weeks after its launch.

For the burgers:

110g fresh breadcrumbs
4 spring onions, finely chopped
1 tablespoon chopped parsley
2 tablespoons chopped basil
1 teaspoon mustard
100g mozzarella
50g grated parmesan
2 egg yolks
1 egg
egg wash & breadcrumbs to coat

To serve:

8 large flat mushrooms
1 small iceberg lettuce
2 tablespoons mayonnaise
6 new potatoes
6 small beetroot
3 baby aubergines
2 beef tomatoes
1 yellow pepper
1 red pepper
2 medium carrots
olive oil

  1. Mix all the ingredients for the burger, except the egg wash & breadcrumbs, together in a bowl & divide it into 4 portions, squeezing the mixture into balls. Then flatten them into burger shapes & leave to rest in the fridge.
  2. To make the garnish: shred the lettuce & mix with the mayonnaise. Season. Slice the tomatoes & season. Grill or fry the flat mushrooms, but don’t overcook them as they need to keep their shape. These will act as the burger buns.
  3. Cut the potatoes, aubergines & beetroot into wedges. Cut the pepper & carrots into batons, then cook the vegetables in a frying pan in some olive oil until slightly coloured & soft in the middle. Season & keep warm.
  4. Coat the burgers with egg wash & then breadcrumbs, pressing firmly with a palette knife into shape. Cook the burgers in a frying pan in a generous amount of olive oil, on a medium heat for about 4 minutes on each side. Drain on kitchen paper.
  5. To serve, place a mushroom on a plate with a burger on top, then tomato slices & lettuce. Top with another mushroom & garnish with the vegetables.
