Volcanoes -
4 Large Potatoes
2 Tablespoons margarine (or butter)
½ cup milk
“Lava” -
1 cup milk (low fat, skim, or soy)
2 tablespoons flour
½ grated cheese
2 tablespoons ketchup
Greenery –
1 cup frozen, cooked peas, and steamed broccoli
Peel and dice potatoes and place them in a large pot to simmer until tender,
usually about 15 minutes.
When they’re done, transfer them to a bowl and add the margarine, milk
and salt to taste and mash with electric or hand masher.
For the lava, heat the milk in a saucepan. Dissolve the flour in just enough
water to make it smooth, and when the milk simmers, add it to the pan.
Sprinkle in the cheese and stir until melted, and finally add the ketchup, not
completely stirring it in, but leaving “fiery” streaks.
Serve a large spoonful of potatoes on a plate, making a volcano-like mountain,
with a hole in the top for the lava.
Add some of the greenery around the base, and fill the top with lava, allowing
some to spill down the side.
Dairy Chocolate
Yoghurt (plain, gelatine free),
1 Banana
Place chocolate into microwave proof bowl, cook for 35 sec's,
Add the Yoghurt and, mix
Add the banana but do not mush
Place in cupcake holders or in bobs on tray.
Allow to dry in fridge for aprox...10 mins or whenever needed.
Serve with ice-cream or more banana
Did you know that all popcorn is microwavable?
If you buy your own organic popcorn kernels in bulk, it's not only much more
economical, but you are the one who controls how much salt (if any) goes on,
and you get non of those preservatives or hydrogenated fats.
Here's how: simply put 1/4 cup unpopped kernels in a lunch-sized brown paper
bag. Fold the top over and secure with a couple pieces of tape.
Microwave for two minutes or so, or until you hear the kernels finish popping.
Transfer to a large bowl, sprinkle with salt to taste.
If you'd like, drizzle a small amount of melted nonhydrogenated margarine on
the popcorn and stir well.
