Pumpkin Bread ...

For this recipe you 'll need buttermilk for a subtle tang, and a touch of ginger and molasses for a marvelous complexity of flavors. You cannot go wrong with these muffins.

Pumpkin Bread

  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 eggs
  • 1/3 cup buttermilk
  • 1/3 cup butter, melted
  • 1 tablespoon molasses
  • 1/2 teaspoon vanilla extract
  • 1 cup white sugar
  • 1 cup canned pumpkin
  • 1/2 cup chopped pecans
  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 24 muffin-pan cups, 2 1/4 inches in diameter.
  2. Sift together the flour, baking soda, baking powder, cinnamon, nutmeg and ginger onto wax paper.
  3. Beat together the eggs, buttermilk, melted butter, molasses, vanilla, sugar and pumpkin in a large bowl. Stir in the dry ingredients, all at once, just until moistened. Fold in the nuts. Spoon into the prepared muffin-pan cups, filling almost to the top.
  4. Bake for 20 to 25 minutes or until a wooden pick inserted in the centers comes out clean. Remove the muffins from the cups and cool on wire racks. Serve warm.

Cornbread

  • 1 (12 ounce) package refrigerated biscuit dough
  • 1 (8 ounce) package corn bread mix
  • 1 cup diced onion
  • 1 cup diced celery
  • 1/2 cup butter, softened
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 (14.5 ounce) cans chicken broth
  • 1/8 pound pork sausage
  • 2 hard-cooked eggs
  • 1 teaspoon dried sage (optional)
  1. Prepare biscuits (enough to make 4 cups crumbled), and one 8x8 inch pan cornbread according to package directions. Cool and crumble.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. In a small pot, combine onion, celery, margarine and chicken broth. Bring to boil and cook vegetables until tender.
  4. In a 2-quart casserole dish, combine 4 cups crumbled cornbread, 4 cups biscuit crumbs, salt, pepper, sausage, chopped eggs and sage. Pour broth and vegetables over bread mixture, and stir until combined.
  5. Bake in the preheated oven for 30 to 45 minutes.
