Pumpkin Bread ...
For this recipe you 'll need buttermilk for a subtle tang, and a touch of
ginger and molasses for a marvelous complexity of flavors. You cannot go wrong
with these muffins.
Pumpkin Bread
- 2 cups sifted all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 2 eggs
- 1/3 cup buttermilk
- 1/3 cup butter, melted
- 1 tablespoon molasses
- 1/2 teaspoon vanilla extract
- 1 cup white sugar
- 1 cup canned pumpkin
- 1/2 cup chopped pecans
- Preheat the oven to 350 degrees F (175 degrees C). Grease 24 muffin-pan
cups, 2 1/4 inches in diameter.
- Sift together the flour, baking soda, baking powder, cinnamon, nutmeg
and ginger onto wax paper.
- Beat together the eggs, buttermilk, melted butter, molasses, vanilla,
sugar and pumpkin in a large bowl. Stir in the dry ingredients, all at once,
just until moistened. Fold in the nuts. Spoon into the prepared muffin-pan
cups, filling almost to the top.
- Bake for 20 to 25 minutes or until a wooden pick inserted in the centers
comes out clean. Remove the muffins from the cups and cool on wire racks.
Serve warm.
Cornbread
- 1 (12 ounce) package refrigerated biscuit dough
- 1 (8 ounce) package corn bread mix
- 1 cup diced onion
- 1 cup diced celery
- 1/2 cup butter, softened
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 (14.5 ounce) cans chicken broth
- 1/8 pound pork sausage
- 2 hard-cooked eggs
- 1 teaspoon dried sage (optional)
- Prepare biscuits (enough to make 4 cups crumbled), and one 8x8 inch pan
cornbread according to package directions. Cool and crumble.
- Preheat oven to 350 degrees F (175 degrees C).
- In a small pot, combine onion, celery, margarine and chicken broth. Bring
to boil and cook vegetables until tender.
- In a 2-quart casserole dish, combine 4 cups crumbled cornbread, 4 cups
biscuit crumbs, salt, pepper, sausage, chopped eggs and sage. Pour broth
and vegetables over bread mixture, and stir until combined.
- Bake in the preheated oven for 30 to 45 minutes.
